Chocolate tempering machine is an essential equipment for producing natural cocoa butter and cocoa butter-like (CBE) chocolate. This series of machines is a special temperature adjustment method determined according to the change law of the chocolate slurry crystal form and the stable growth and formation of the crystal form at different temperatures. It can strictly and automatically control the different temperatures required by the chocolate slurry in each process stage. To ensure the quality of chocolate products, make the natural aroma of chocolate stronger, smooth taste, bright color and good preservation.
Working principle of chocolate tempering machine:
The temperature control center is divided into multiple layers, which are divided into four temperature zones according to the temperature control requirements. Each layer is divided into two parts: a slurry layer and a water layer. The cold water or hot water enters the water layer of each layer through the pipeline system. The chocolate slurry in the paste layer is cooled or heated according to the temperature adjustment requirements, so as to achieve the purpose of temperature adjustment. The solenoid valves controlled by the temperature sensor act according to the temperature requirements to determine the on and off of the cold and hot water and the on and off of the cold and hot water pumps. Therefore, the use of this machine can make the chocolate paste temperature control accuracy reach ±1℃, and each paste layer has a stirring paste to make the chocolate paste temperature uniform.
